Understanding Baking Pan Conversions
Different recipes call for different pan sizes, but you may not always have the exact pan specified. This calculator helps you convert recipes between different pan sizes by calculating the volume difference and providing a scaling factor.
The scaling factor is based on the approximate volume capacity of each pan. Once you know the factor, you can multiply all ingredients by that number to adjust the recipe for your pan size.
Common Baking Pan Sizes
Square Pans
- 8x8 inch: ~8 cups capacity - Good for brownies, bars, small cakes
- 9x9 inch: ~10 cups capacity - Standard square cake pan
Rectangular Pans
- 9x13 inch: ~14 cups capacity - Most common sheet cake size
- 8x12 inch: ~12 cups capacity - Slightly smaller than 9x13
- 10x15 inch: ~18 cups capacity - Large sheet pan for parties
Round Pans
- 6 inch: ~4 cups capacity - Small layer cake
- 8 inch: ~6 cups capacity - Standard layer cake
- 9 inch: ~8 cups capacity - Large layer cake
- 10 inch: ~10 cups capacity - Extra large layer cake
Specialty Pans

Example Conversions
Example 1: 8x8 to 9x13
Original: 8x8 inch pan (8 cups)
Desired: 9x13 inch pan (14 cups)
Scaling Factor: 14 รท 8 = 1.75x
Original Recipe: 2 cups flour
Adjusted: 2 ร 1.75 = 3.5 cups flour
Example 2: 9 inch round to 8 inch round
Original: 9 inch round (8 cups)
Desired: 8 inch round (6 cups)
Scaling Factor: 6 รท 8 = 0.75x
Original Recipe: 3 eggs
Adjusted: 3 ร 0.75 = 2.25 eggs (use 2 whole eggs + 1 yolk, or 2 whole eggs)
Adjusting Baking Times
When changing pan sizes, you'll also need to adjust baking times:
- Larger pans: May need slightly longer baking time, but check earlier as depth may be less
- Smaller pans: May need slightly less baking time, but check later as depth may be more
- Thinner layers: Bake faster - start checking 5-10 minutes earlier
- Thicker layers: Bake slower - may need 5-15 minutes more
- Always use the toothpick test: Insert a toothpick in the center - it should come out clean when done
Tips for Pan Conversions
- Volume matters more than dimensions: A 9x13 pan holds more than an 8x8, even though both are rectangular
- Round vs square: A 9 inch round pan and an 8x8 square pan have similar volumes
- Test with water: To verify pan capacity, fill your pan with water and measure it
- Consider depth: Deeper pans may need longer baking times even with the same volume
- Watch for overflow: When scaling up, make sure your pan is large enough to prevent overflow
- Use multiple pans: If scaling up significantly, consider dividing between multiple pans
